Ingredients
  

For the Cheesecake Filling
  • 6 oz 6 oz (170 g) cream cheese, cold Using cold cream cheese helps to maintain the filling’s texture.
  • 3 tbsp 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp 1/2 tsp vanilla
For the Strawberry Jam
  • 12 oz 12 oz (340 g) fresh strawberries, hulled and finely diced Fresh strawberries make all the difference in flavor!
  • 1/4 cup 1/4 cup (50 g) granulated white sugar
For the Cookies
  • 2 3/4 cups 2 3/4 cups (344 g) all-purpose flour, spooned and leveled
  • 1/2 tsp 1/2 tsp baking powder
  • 1/2 tsp 1/2 tsp baking soda
  • 1/2 tsp 1/2 tsp salt
  • 1 cup 1 cup (200 g) granulated white sugar
  • 1 cup 1 cup (227 g) unsalted butter, very softened
  • 1 pc 1 egg, at room temperature
  • 2 tsp 2 tsp vanilla
  • 1/4 cup 1/4 cup (50 g) granulated white sugar, for rolling dough in

Method
 

For the Cheesecake Filling
  1. In a mixing bowl, beat the cream cheese, granulated sugar, and vanilla together until smooth.
  2. Pop it in the fridge while you prepare the rest.
For the Strawberry Jam
  1. In a small saucepan over medium heat, combine diced strawberries and granulated sugar.
  2. Stir until the berries break down into a lovely jammy mixture. Let it cool.
For the Cookies
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, cream together the butter and 200 g sugar until fluffy.
  4. Add the egg and vanilla; mix until combined.
  5. Gradually mix in the dry ingredients until just incorporated.
  6. Take a scoop of cookie dough, place a little dollop of cheesecake filling, and a spoonful of strawberry jam in the middle, then seal it up.
  7. Roll the dough in the extra sugar and place on the baking sheet.
  8. Bake for 12-15 minutes or until the cookies look slightly golden.

Notes

These cookies are fantastic on their own, but for a fancy touch, drizzle some extra strawberry jam on top or a sprinkle of powdered sugar. Serve them warm with a scoop of vanilla ice cream or alongside your favorite hot beverage.
