Method
For the Cheesecake Filling
- In a mixing bowl, beat the cream cheese, granulated sugar, and vanilla together until smooth.
- Pop it in the fridge while you prepare the rest.
For the Strawberry Jam
- In a small saucepan over medium heat, combine diced strawberries and granulated sugar.
- Stir until the berries break down into a lovely jammy mixture. Let it cool.
For the Cookies
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a separate bowl, cream together the butter and 200 g sugar until fluffy.
- Add the egg and vanilla; mix until combined.
- Gradually mix in the dry ingredients until just incorporated.
- Take a scoop of cookie dough, place a little dollop of cheesecake filling, and a spoonful of strawberry jam in the middle, then seal it up.
- Roll the dough in the extra sugar and place on the baking sheet.
- Bake for 12-15 minutes or until the cookies look slightly golden.
Notes
These cookies are fantastic on their own, but for a fancy touch, drizzle some extra strawberry jam on top or a sprinkle of powdered sugar. Serve them warm with a scoop of vanilla ice cream or alongside your favorite hot beverage.
