  • 2 cups fresh spinach Use fresh spinach for the best flavor and texture.
  • 1 cup feta cheese, crumbled If desired, substitute goat cheese for a tangy twist.
  • 4 large tortillas
  • 1 tablespoon olive oil For sautéing the spinach.
  • to taste Salt and pepper

Method
 

Preparation
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the fresh spinach and sauté until wilted, about 2-3 minutes.
  3. Remove from heat and mix in the crumbled feta cheese.
Cooking
  1. Place a tortilla in the skillet, and spread the spinach and feta mixture on one half of the tortilla.
  2. Fold the tortilla over and cook until golden brown on both sides, about 2-3 minutes per side.
  3. Repeat with remaining tortillas.
  4. Cut into wedges and serve hot.

Notes

Serve with sour cream or salsa for added flavor. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. To reheat, place in a skillet over low heat until warmed through and crispy.
