Preparation
- Heat the olive oil in a skillet over medium heat.
- Add the fresh spinach and sauté until wilted, about 2-3 minutes.
- Remove from heat and mix in the crumbled feta cheese.
Cooking
- Place a tortilla in the skillet, and spread the spinach and feta mixture on one half of the tortilla.
- Fold the tortilla over and cook until golden brown on both sides, about 2-3 minutes per side.
- Repeat with remaining tortillas.
- Cut into wedges and serve hot.
Notes
Serve with sour cream or salsa for added flavor. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. To reheat, place in a skillet over low heat until warmed through and crispy.
