  • 1 lb Boneless Chicken Breasts/Thighs Thighs for richer flavor, breasts for a leaner option.
  • 2 cups Corn Fresh grilled, frozen, or canned corn.
  • 4 oz Cream Cheese Can use vegan alternatives like Tofutti or Kite Hill.
  • 1/3 cup Cotija Cheese Feta works as a substitute.
  • 1 lime Lime Juice; freshly squeezed preferred.
  • 2 cloves Garlic Minced; jarred can be used.
  • 1/2 tsp Chili Powder Chipotle or cayenne can be used for more heat.
  • 1/2 tsp Smoked Paprika Adds smokiness.
  • 1/2 tsp Onion Powder
  • to taste Fresh Cilantro Optional.

Method
 

Preparation
  1. Place the chicken in the slow cooker.
  2. Add the corn on top of the chicken.
  3. In a bowl, combine the cream cheese, Cotija cheese, lime juice, garlic, chili powder, smoked paprika, and onion powder.
  4. Pour the mixture over the chicken and corn, ensuring everything is coated.
  5. Cover and cook on low for about 6-8 hours or high for 3-4 hours.
  6. Before serving, garnish with fresh cilantro, if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat in the microwave or thaw overnight in the fridge before warming up.
