  • 2 lbs boneless skinless chicken breast or thighs
  • 1 medium onion, thinly sliced
  • ¼ cup chicken broth
  • 1 medium lemon, juiced (about 3 tablespoons)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Method
 

Preparation
  1. Place the chicken in the bottom of the slow cooker.
  2. Add the thinly sliced onion on top of the chicken.
  3. In a small bowl, whisk together the chicken broth, lemon juice, garlic, olive oil, oregano, thyme, sea salt, and pepper.
  4. Pour the mixture evenly over the chicken and onions in the slow cooker.
Cooking
  1. Put the lid on the slow cooker and cook on LOW for 5-6 hours or on HIGH for 3-4 hours until the chicken is tender or the internal temperature reaches 165°F/75°C.
  2. Once cooked, shred the chicken with two forks right in the slow cooker, allowing it to soak up all that juicy goodness.
Serving
  1. Serve warm with rice, pasta, pita, or on top of a Greek salad.
  2. Consider adding tzatziki for an extra flavor boost.

Notes

Don't rush the cooking. Let the chicken cook until tender for optimal flavor. Consider marinating overnight for enhanced taste, and feel free to try vegan options by swapping chicken for tofu.
