Ingredients
  

Cookie Dough Base
  • 125 g butter (softened) Use softened butter for easy creaming.
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 large egg Can substitute with flax egg or applesauce if needed.
  • 1 tsp vanilla extract
  • 2 cups plain flour Can replace with gluten-free flour.
  • 2 Tablespoons cornflour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Mix-ins of your choice (from various flavor ideas) Options include chocolate chips, dried fruits, nuts, etc.

Method
 

Preparation
  1. Cream the butter and both sugars in a mixer until fluffy.
  2. Beat in the egg and vanilla until well combined.
  3. Mix flour, cornflour, baking powder, and salt on low speed until just combined. Add in your chosen mix-ins.
  4. Shape the dough into two rolls about 20cm long. Wrap in plastic and chill for at least 2 hours (or ideally, overnight).
Baking
  1. Preheat your oven to 180°C/350°F.
  2. Slice the chilled dough into 1cm thick pieces and lay them on a lined baking tray.
  3. Bake for 8-10 minutes or until they look golden.
  4. Cool on the tray for 5 minutes before transferring to a cooling rack.

Notes

Store baked cookies in an airtight container at room temperature for up to 1 week. Unbaked dough can be stored in the fridge for up to 1 week or in the freezer for up to 3 months. Mix and match flavors for creative variations!
