Preparation
- Cream the butter and both sugars in a mixer until fluffy.
- Beat in the egg and vanilla until well combined.
- Mix flour, cornflour, baking powder, and salt on low speed until just combined. Add in your chosen mix-ins.
- Shape the dough into two rolls about 20cm long. Wrap in plastic and chill for at least 2 hours (or ideally, overnight).
Baking
- Preheat your oven to 180°C/350°F.
- Slice the chilled dough into 1cm thick pieces and lay them on a lined baking tray.
- Bake for 8-10 minutes or until they look golden.
- Cool on the tray for 5 minutes before transferring to a cooling rack.
Notes
Store baked cookies in an airtight container at room temperature for up to 1 week. Unbaked dough can be stored in the fridge for up to 1 week or in the freezer for up to 3 months. Mix and match flavors for creative variations!
