Ingredients
  

Vegetables
  • 1.5 pounds Fresh Green Beans, trimmed Choose vibrant green beans that snap easily.
  • 1 pound Cremini Mushrooms, sliced or quartered These have an earthy flavor.
  • 4 cloves Garlic, minced Adjust amount to taste for more flavor.
Cooking Essentials
  • 3 tablespoons Olive Oil, extra virgin Avocado oil works too for higher smoke points.
  • 1 tablespoon Soy Sauce Use Tamari for gluten-free.
  • 1/2 teaspoon Salt Kosher or sea salt is recommended.
  • 1/4 teaspoon Black Pepper Freshly ground is best.
  • 1 tablespoon Butter, unsalted Optional for a richer finish.
Optional Seasonings
  • 1 tablespoon Red Pepper Flakes For those who like it spicy.
  • to taste Fresh Parsley or Chives, chopped For garnishing.

Method
 

Preparation
  1. Wash and trim the green beans. They can be kept whole or cut into bite-sized pieces.
  2. Clean the mushrooms gently with a damp paper towel.
  3. Mince the garlic and set it aside.
Blanch the Green Beans
  1. Add the green beans and cook for 2-4 minutes until bright green and tender-crisp.
  2. Drain and plunge into an ice bath to preserve color.
  3. Drain again and pat dry.
Sauté the Mushrooms
  1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
  2. Add mushrooms in a single layer and cook for 3-4 minutes without stirring.
  3. Stir and cook for another 4-6 minutes until browned.
Sauté the Green Beans and Garlic
  1. Add the last tablespoon of olive oil (more if skipping blanching) to the skillet.
  2. Add the green beans and cook for 4-6 minutes until tender-crisp.
  3. Push the green beans to one side and add garlic, cooking for 30-60 seconds until fragrant.
Combine and Season
  1. Add mushrooms back to the skillet with the green beans and garlic.
  2. Sprinkle in the soy sauce, salt, and pepper and mix well.
  3. If using, add butter and stir until melted.
Serve
  1. Taste and adjust seasonings as needed.
  2. Transfer to a serving dish and garnish with fresh herbs.

Notes

For best results, don't skip the blanching step to enhance color and texture. Experiment with different mushrooms for unique flavors.
