  • 1 pound Italian sausage You can use spicy Italian sausage for added heat.
  • 2 medium potatoes, diced Any variety of potatoes works well.
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, sliced
  • 4 cups vegetable broth Check for gluten-free options if necessary.
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove excess fat.
  2. Add the onion, carrots, and celery; cook until softened.
Cooking
  1. Stir in the potatoes, broth, diced tomatoes, garlic powder, salt, and pepper.
  2. Bring to a boil, then reduce heat and simmer for 20-30 minutes until the vegetables are tender.
  3. Serve hot, garnished with fresh parsley.

Notes

For extra flavor, add spinach or green beans. You can use turkey or chicken as a lighter option. Great when served with crusty bread or a side salad.
