  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
Cheesecake Filling
  • 1 package cream cheese, softened
  • 1/4 cup powdered sugar
Additional Ingredients
  • 1/2 cup salted caramel sauce

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream the softened butter with brown and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract, then mix in the dry ingredients until just combined.
  5. In a separate bowl, whip the cream cheese with powdered sugar until smooth.
  6. Scoop a spoonful of dough onto the prepared baking sheet, then add a dollop of the cream cheese mixture on top.
  7. Swirl the cream cheese into the cookie dough with a toothpick or knife.
  8. Drizzle salted caramel sauce over each cookie.
Baking
  1. Bake for 10-12 minutes, or until the edges look lightly golden.
  2. Allow them to cool before serving.

Notes

Store in an airtight container at room temperature for up to a week or in the fridge for up to two weeks. Softened butter is key for mixing properly. Adjust the saltiness with the amount of salted caramel sauce.
