Ingredients
  

For the Cookie Dough
  • 1 cup salted butter, softened at room temperature
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 and 1/2 tsp vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour spooned & leveled
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 and 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/8 tsp ground cloves
For the Apple Filling
  • 4 large apples, peeled and diced (approximately 775 grams or 27 ounces)
  • 1/4 cup salted butter, cubed (4 tbsp)
  • 2 tbsp apple cider or lemon juice
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
For the Salted Caramel Sauce
  • 1 cup granulated sugar (206 grams)
  • 6 tbsp salted butter, cubed
  • 1/2 cup heavy cream (plus 1 tbsp)
  • 1 pinch flaky sea salt (Maldon brand is recommended)
For the Crumble
  • 1/2 cup granulated sugar
  • 2 and 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves
  • 1/4 cup salted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 and 1/2 tbsp granulated sugar
  • 1/2 cup all-purpose flour (plus 1 tbsp)
  • 3/4 tsp cinnamon
  • 1 pinch salt

Method
 

Preparation
  1. Cream the softened butter and mix in the sugars until combined.
  2. Add vanilla and eggs; mix until just combined.
  3. Gradually add the dry ingredients until a dough forms.
  4. Chill for 30 minutes.
Apple Filling
  1. Rinse, peel, and dice the apples.
  2. Mix apple filling ingredients in a pan over medium heat for 15-18 minutes.
  3. Let it cool.
Salted Caramel Sauce
  1. Follow a simple recipe to make salted caramel and cool it for around 20 minutes.
Crumble
  1. Preheat the oven to 350°F.
  2. Melt butter, mix in remaining crumble ingredients, and bake for 12-14 minutes.
Baking
  1. Roll the dough balls in the sugar mix and bake for 10-12 minutes.
  2. Create an indent once cooled slightly.
Assemble
  1. Spoon in the apple filling, top with crumble and drizzle salted caramel.
Serving
  1. Enjoy warm or with a scoop of vanilla ice cream.
Storage
  1. Store in an airtight container in the fridge for 4-5 days.

Notes

Chill the dough for easier scooping. Firm apples like Granny Smith or Honeycrisp work best for the filling.
