  • 1 lb green beans, trimmed
  • 2 tbsp olive oil
  • 2 large garlic cloves, minced
  • to taste Salt and pepper
  • 1/2 cup freshly grated parmesan (Parmigiano-Reggiano recommended) For best flavor, use freshly grated.
  • 1/2 whole lemon, juiced
  • 1-2 tbsp chopped fresh parsley (for garnish)

Method
 

Preparation and Roasting
  1. Preheat the oven to 400°F (205°C) and line a large baking sheet with parchment paper.
  2. Spread the trimmed green beans on the baking sheet.
  3. Toss with olive oil, garlic, salt, and pepper until everything is evenly coated.
  4. Arrange the green beans in a single layer and sprinkle parmesan evenly over the top.
  5. Roast for 20 minutes or until the cheese is melted and slightly crispy and the beans are browned but still crisp-tender.
  6. Remove from the oven, finish with lemon juice and parsley, and serve hot.

Notes

Don’t overcrowd the baking sheet to avoid soggy beans. Fresh ingredients make a difference! Consider experimenting with additional vegetables like cherry tomatoes or bell peppers for variety.
