Ingredients

  • 1 lb fresh carrots, peeled and cut into sticks
  • 1 lb fresh green beans, trimmed
Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper, freshly ground

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the carrots and cut them into uniform sticks. Trim the ends of the green beans.
  3. In a large bowl, toss the prepared vegetables with olive oil, garlic powder, salt, and pepper until evenly coated.
Cooking
  1. Spread the seasoned veggies in a single layer on the prepared baking sheet.
  2. Roast in the oven for 20-25 minutes, stirring halfway through for even roasting.
  3. Once tender and lightly caramelized, remove from the oven and serve immediately.

Notes

Cut uniform pieces for even cooking. Experiment with seasonings like parmesan cheese or balsamic glaze. Do not overcrowd the pan, and try different veggies like bell peppers or zucchini.
