Preparation
- Wash and peel the potatoes, then cut them into bite-sized pieces.
- In a large pot, bring water to a boil and add the potatoes. Cook until tender, about 15 minutes.
- In the last 5 minutes, add the green beans to the pot.
- Drain the potatoes and green beans, then return them to the pot.
- Drizzle with olive oil, minced garlic, salt, pepper, and herbs; toss to combine.
- Serve warm and enjoy!
Notes
Refrigerate any leftovers for 3–5 days. They can also be frozen for up to a month. For added flavor, reheat with a splash of olive oil.
