  • 4 medium Potatoes Use waxy potatoes for a creamier texture.
  • 2 cups Green Beans You can substitute with other veggies like asparagus or broccoli.
  • 2 tablespoons Olive Oil Drizzle for flavor.
  • 2 cloves Garlic, minced Toasted garlic makes a big difference.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Adjust to taste.
  • 1 tablespoon Herbs (thyme or parsley) Add more for flavor.

Method
 

Preparation
  1. Wash and peel the potatoes, then cut them into bite-sized pieces.
  2. In a large pot, bring water to a boil and add the potatoes. Cook until tender, about 15 minutes.
  3. In the last 5 minutes, add the green beans to the pot.
  4. Drain the potatoes and green beans, then return them to the pot.
  5. Drizzle with olive oil, minced garlic, salt, pepper, and herbs; toss to combine.
  6. Serve warm and enjoy!

Notes

Refrigerate any leftovers for 3–5 days. They can also be frozen for up to a month. For added flavor, reheat with a splash of olive oil.
