Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, vanilla extract, maple syrup, salt, and pepper.
  3. Grease a baking dish and layer the torn croissant pieces evenly in the dish.
  4. Sprinkle the diced ham or bacon (if using) and shredded cheese over the croissants.
  5. Pour the egg mixture evenly over the croissants and toppings, ensuring everything is well soaked.
  6. Cover the dish with plastic wrap and refrigerate overnight.
Cooking
  1. In the morning, remove the plastic wrap and bake for 35-40 minutes until the casserole is set and golden brown.
  2. Garnish with fresh herbs if desired and serve warm.

Notes

For a vegan version, substitute eggs and milk with chickpea flour and plant-based milk. Customize with your favorite veggies or seasonings.
