  • 2 cups old-fashioned oats
  • 1.5 cups milk (or almond milk for dairy-free)
  • 1 large apple, diced
  • 2 large eggs
  • 0.25 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.25 cup chopped walnuts or pecans (optional) For added crunch and flavor.

Method
 

Preheat & Prep
  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
Mix the Ingredients
  1. In a large bowl, whisk together eggs, milk, maple syrup, and vanilla extract.
  2. Stir in oats, baking powder, cinnamon, and salt.
  3. Fold in the diced apples and nuts if you’re using them.
Bake
  1. Pour the mixture into the greased baking dish and spread it evenly.
  2. Pop it in the oven and bake for 30-35 minutes, or until the top is golden and the center is set.
Serve
  1. Let it cool for about 5 minutes before serving. Enjoy it warm, or refrigerate and reheat for an easy breakfast option.

Notes

Leftovers can be stored in the fridge for up to a week and are easy to reheat. Adding a sprinkle of cinnamon and a drizzle of maple syrup elevates the dish.
