Ingredients
  

Butter and Sugars
  • 1/2 cup 1/2 cup (111g) salted butter, softened Use softened butter for easier mixing.
  • 1/4 cup 1/4 cup (62g) peanut butter Creamy peanut butter is preferred.
  • 1 cup 1 cup (246g) brown sugar Packed brown sugar adds moisture.
  • 1/4 cup 1/4 cup (58g) granulated sugar
Wet Ingredients
  • 2 large 2 eggs Should be at room temperature.
  • 2 tsp 2 tsp vanilla extract
Dry Ingredients
  • 2 cups 2 cups (304g) all-purpose flour
  • 1 cup 1 cup (100g) rolled oats Old-fashioned oats are recommended.
  • 1 tsp 1 tsp baking soda
  • 1/2 tsp 1/2 tsp baking powder
  • 1/2 tsp 1/2 tsp salt
Mix-ins
  • 1 cup 1 cup (200g) semi-sweet chocolate chips
  • 3/4 cup 3/4 cup (150g) M&Ms

Method
 

Preparation
  1. Line a 9x9 pan with parchment paper and set aside.
  2. Preheat the oven to 350°F (180°C).
  3. Cream together the butter, peanut butter, brown sugar, and granulated sugar until smooth and creamy.
  4. Add the eggs and vanilla; mix until well combined.
  5. Add the flour, oats, baking soda, baking powder, and salt. Mix until a sticky dough forms.
  6. Mix in the chocolate chips and M&Ms.
  7. Pour the mixture into the prepared pan and loosely press the dough into the pan.
  8. Bake at 350°F (180°C) for 25-30 minutes or until the tops are golden brown.
  9. Let the cookie bars cool completely before removing from the pan and cutting.

Notes

Store in an airtight container for 3-4 days at room temperature. For a fun variation, use a muffin tin to make Monster Cookie Cups.
