Preparation
- Preheat the oven to 350°F (175°C) and grease a cake pan.
- In a mixing bowl, combine Greek yogurt, eggs, and vanilla extract until well mixed.
- In another bowl, mix almond flour, coconut flour, erythritol, baking powder, and salt until combined.
- Gradually add the dry ingredients to the wet mixture and stir until smooth.
- Pour the batter into the prepared cake pan and smooth the top.
Baking
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Let it cool before serving.
Notes
Store in the fridge for up to 5 days or freeze slices tightly wrapped in plastic wrap for up to a month. Optional add-ins: lemon juice or orange zest for flavor, cocoa powder for a chocolate version, or flax eggs for a vegan option.
