Ingredients
  

Wet Ingredients
  • 1 cup Greek yogurt Use unsweetened Greek yogurt for best results.
  • 4 large eggs Use room temperature eggs for a fluffier cake.
  • 1 tsp vanilla extract Pure vanilla extract recommended.
Dry Ingredients
  • 1/2 cup almond flour Almond flour gives a great texture.
  • 1/4 cup coconut flour
  • 1/2 cup erythritol or sweetener of choice Feel free to substitute with your favorite sweetener.
  • 1 tsp baking powder
  • 1/2 tsp salt Balance the sweetness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a mixing bowl, combine Greek yogurt, eggs, and vanilla extract until well mixed.
  3. In another bowl, mix almond flour, coconut flour, erythritol, baking powder, and salt until combined.
  4. Gradually add the dry ingredients to the wet mixture and stir until smooth.
  5. Pour the batter into the prepared cake pan and smooth the top.
Baking
  1. Bake for 25-30 minutes, or until a toothpick comes out clean.
  2. Let it cool before serving.

Notes

Store in the fridge for up to 5 days or freeze slices tightly wrapped in plastic wrap for up to a month. Optional add-ins: lemon juice or orange zest for flavor, cocoa powder for a chocolate version, or flax eggs for a vegan option.
