Preparation
- Preheat your oven to 400°F.
- In a large bowl, mix all the ingredients for the meatballs together until well combined.
- Roll the mixture into golf ball-sized meatballs.
Cooking
- Heat a little oil in a pan on high heat. Sear each meatball on one or two sides, ensuring not to crowd the pan.
- Once seared, remove the meatballs from the pan and lower the heat to medium.
- Add in the tomato paste and cook for about 10 seconds before pouring in the pizza sauce.
- Combine the sauces and return the meatballs to the pan. Turn off the heat.
- Top the meatballs with shredded mozzarella and Parmesan cheese.
- Place the pan in the preheated oven (uncovered) for 20 minutes or until the cheese turns golden brown.
Notes
Don't skip the searing step; it adds delicious depth of flavor. Serve hot with extra sauce and garnished with herbs. Leftovers can be stored for up to 4 days in the fridge or frozen.
