  • 2 pounds ground turkey (or ground beef or pork) Can use any ground meat of choice.
  • 1 piece egg Bind the meat mixture.
  • ¾ cup shredded mozzarella cheese For the meatballs.
  • 1 teaspoon onion powder Adds flavor.
  • 1 teaspoon garlic powder Adds flavor.
  • 1 teaspoon Italian seasoning For an Italian touch.
  • 1 teaspoon salt To taste.
Casserole Ingredients
  • 1 cup low-carb tomato sauce (no added sugar) To layer over meatballs.
  • 1 cup shredded mozzarella cheese For topping.
  • ½ cup grated parmesan cheese For topping.
  • to taste Fresh basil or parsley For garnish, optional.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper to keep it mess-free.
  3. In a large bowl, mix together the ground turkey, egg, shredded mozzarella, onion powder, garlic powder, Italian seasoning, and salt until well combined.
  4. Roll the mixture into 1.5-inch meatballs and place them on the prepared baking sheet.
Baking
  1. Bake the meatballs for 25 minutes until they are cooked through and fragrant.
  2. Transfer the baked meatballs to a casserole dish.
  3. Top the meatballs with the low-carb tomato sauce, remaining mozzarella, and parmesan cheese.
  4. Bake uncovered for 15-20 minutes until the cheese is melted and bubbly.
  5. For a golden topping, broil for an additional 2-3 minutes.
Serving
  1. Let it rest for 5 minutes before serving.
  2. Garnish with fresh basil or parsley and enjoy hot!

Notes

Leftovers can be stored in the fridge for up to 5 days or frozen for up to 3 months in an airtight container. To reheat, use the oven or microwave until heated through.
