  • 8 large Eggs
  • ¼ cup Milk
  • ½ - 1 tsp Salt Adjust according to preference
  • ½ tsp Black Pepper
Flavor Variations
  • ¼ cup White Onion (finely diced)
  • cup Baby Spinach (roughly chopped)
  • 4 strips Bacon (cooked and crumbled)
  • 2 links Cooked Chicken Sausage (chopped)
  • ½ - ⅔ cup Mushrooms (diced) Use white or baby bella
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ cup Bell Pepper (any color, chopped)
  • ¼ - ⅓ cup Shredded Cheddar or Mozzarella Cheese
  • ¼ cup Buffalo Sauce Optional for spice
  • ¼ cup Chopped Green Onions
  • 1 cup Rotisserie Chicken (chopped)

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and grease a regular muffin tin with avocado oil or cooking spray.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper.
  3. Choose your flavor variation and stir in the respective ingredients.
  4. Divide the egg mixture evenly among the greased muffin cups.
  5. If you’re feeling cheesy, sprinkle extra cheese on top.
  6. Bake for 14-18 minutes until puffed and set. They will slightly deflate after being removed from the oven.
  7. Enjoy your homemade deliciousness!

Notes

These egg bites can be stored in the fridge for about 5 days and frozen for up to a month. Reheat in the microwave for 30-60 seconds before eating.
