  • 4 leaves Crunchy iceberg lettuce Large leaves for wrapping.
  • 8 slices Pepperoni slices Thick slices preferred.
  • 8 slices Salami slices Thick slices preferred.
  • 2 slices Smoky Gouda cheese slices Can use more if desired.

Method
 

Preparation
  1. Take a large leaf of iceberg lettuce.
  2. Place thick slices of pepperoni and salami in the center of the lettuce leaf.
  3. Add a slice (or two) of smoked Gouda on top.
  4. Wrap the lettuce around the meats and cheese tightly.
  5. Serve immediately as a low-carb lunch.

Notes

Store the wraps in an airtight container in the fridge for up to 2 days. Best eaten fresh but ingredients can be prepared in advance. Avoid freezing as lettuce does not freeze well.
