Ingredients
  

For the Cookies
  • 1/2 cup butter (softened) Make sure it's softened for easy mixing.
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 unit egg (at room temperature)
  • 1 1/4 cup old fashioned whole rolled oats For texture.
  • 1 cup all-purpose flour Sift if possible.
  • 1/4 tsp cinnamon
  • pinch nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
For the Glaze
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Method
 

Preparation
  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until combined.
  3. Add the egg and vanilla extract, then mix until light and fluffy.
  4. Combine the flour, oats, cinnamon, nutmeg, baking soda, and salt, mixing until everything is well combined.
  5. Using a large cookie scooper, scoop out 8 equally sized cookie dough balls onto the prepared baking sheet.
  6. Gently press down on each cookie to about 1 inch thick.
Baking
  1. Bake in the preheated oven for 10 minutes, ensuring they remain soft and gooey.
  2. Let the cookies cool on the baking sheet for 20 minutes before transferring them to a cooling rack.
Making the Glaze
  1. In a separate bowl, mix together powdered sugar, milk, and vanilla until smooth.
  2. Drizzle the glaze over the cooled cookies before serving.

Notes

Store leftover cookies in an airtight container at room temperature for up to a week. You can also refrigerate them for an extra cool treat.
