Ingredients
  

Vegetables
  • 4 large carrots, peeled and sliced
  • 2 cups green beans, trimmed
Seasoning and Sauce
  • 2 tablespoons honey Can substitute with maple syrup for a different flavor
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
Garnish
  • Fresh parsley Optional for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the sliced carrots and green beans.
  3. Drizzle with olive oil and honey, and season with salt and pepper.
  4. Toss until the vegetables are evenly coated.
  5. Spread the vegetables on a baking sheet in a single layer.
Cooking
  1. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
  2. Garnish with fresh parsley before serving.

Notes

Toss the veggies a couple of times while roasting for even caramelization.
