Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the sliced carrots and green beans.
- Drizzle with olive oil and honey, and season with salt and pepper.
- Toss until the vegetables are evenly coated.
- Spread the vegetables on a baking sheet in a single layer.
Cooking
- Roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
- Garnish with fresh parsley before serving.
Notes
Toss the veggies a couple of times while roasting for even caramelization.
