Preparation
- Preheat your oven to 400°F (200°C). Spray a mini muffin tin well.
- In a bowl, whisk together the pancake mix, milk, eggs, and syrup until you achieve a smooth batter.
- Fold in the cooked sausage and shredded cheese gently.
- Fill each muffin cup ¾ full with the batter.
Baking
- Bake for about 15 minutes, or until the muffins are golden and firm to the touch.
- Cool for a few minutes before serving or storing.
Notes
Serve warm with extra maple syrup drizzled on top and a side of fresh fruit. Store in the fridge for 3-4 days or freeze for longer-lasting goodness. Reheat in the microwave or oven.
