  • 1/2 cup cottage cheese can use dairy-free alternative
  • 1/2 cup spinach, chopped
  • 1/4 cup red bell pepper, diced
  • 1/4 cup feta cheese (optional)

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. In a bowl, combine egg whites, cottage cheese, spinach, red bell pepper, feta cheese (if using), salt, and pepper.
  3. Mix well until everything is fully combined.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
Cooking
  1. Bake in the preheated oven for 20-25 minutes or until the bites are set and lightly golden.
  2. Let cool slightly before removing from the tin. Enjoy warm or chilled!

Notes

These bites can keep in the fridge for 4-5 days and can be frozen for up to 3 months. For variations, try different veggies or cheese types for added flavor.
