Preparation
- Line a medium-sized baking sheet with parchment paper.
- In a large mixing bowl, add peanut butter and honey, then stir until well-combined.
- Pour almond flour into the peanut butter mixture and stir until it resembles cookie dough.
- Scoop about 1 teaspoon of the peanut butter mixture onto one pretzel and top it with a second pretzel to make a sandwich.
- Place each pretzel sandwich on the prepared baking sheet until all the mixture is used.
Melting Chocolate
- Melt chocolate chips in a small bowl in the microwave, stirring every 30 seconds until smooth (this usually takes about 2 minutes).
Coating
- Dip one half of each pretzel bite into the melted chocolate, then return it to the baking sheet.
- Carefully place the baking sheet in the fridge and let the chocolate harden for about an hour before enjoying.
Notes
Store in an airtight container in the fridge for up to a week or in the freezer for up to three months. Variations include using different nut butters or adding texture with crushed pretzels or nuts.
