Ingredients
  

Wet Ingredients
  • 1 cup applesauce
  • 1 ripe banana Use ripe for sweetness
  • 2 eggs Binds the mixture
  • 1/2 tsp vanilla extract
Dry Ingredients
  • 1 cup rolled oats Can substitute with quick oats
  • 1 tsp baking powder
  • 1 tsp cinnamon Do not skip for flavor
  • Pinch salt

Method
 

Preparation
  1. In a blender or food processor, combine the oats, banana, applesauce, eggs, baking powder, cinnamon, vanilla, and a pinch of salt. Blend until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it.
Cooking
  1. Pour 1/4 cup of the batter onto the skillet for each pancake.
  2. Cook for 2-3 minutes on each side or until golden brown.
  3. Serve warm, topped with fresh fruit or a drizzle of maple syrup if desired.

Notes

For fluffier pancakes, let the batter rest for a few minutes. Use gluten-free oats for a gluten-free version. Store leftovers in the fridge for up to 3 days or freeze for 2 months.
