Main ingredients
  • 12 oz Lasagna noodles
  • 2 cups Homemade tomato sauce Store-bought sauce can also be used, ensure it's low-sugar if desired
  • 1 lb Lean ground meat
  • 1 cup Cottage cheese Mix with beaten eggs for added richness
  • 2 cups Mozzarella cheese Shredded
  • 1/2 cup Parmesan cheese Grated
  • 2 cups Spinach Fresh or frozen, thawed and drained if frozen
  • 2 cloves Garlic Minced
  • 1 medium Onion Diced
  • 1 tbsp Italian seasoning
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Pepper Adjust to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions and set them aside.
  3. In a skillet, sauté diced onion and minced garlic until they get that lovely translucent look.
  4. Toss in the lean ground meat and cook until it’s nicely browned.
  5. Stir in the homemade tomato sauce, spinach, Italian seasoning, salt, and pepper.
  6. In a bowl, mix cottage cheese with beaten eggs and season with salt and pepper to taste.
Assembly
  1. In a baking dish, layer the noodles, meat sauce, cottage cheese mixture, and mozzarella cheese.
  2. Repeat this until all ingredients are used up, finishing it off with mozzarella and Parmesan on top.
Baking
  1. Cover it with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 15 minutes or until it’s deliciously bubbly.
  3. Let it cool for a few minutes before diving in!

Notes

For an extra nutritional boost, use whole wheat noodles. You can also add zucchini or mushrooms for added flavor. This dish can be made ahead of time and stored in the fridge for up to a day before baking. For longer storage, freeze it in an airtight container for about 3 months.
