Preparation
- Wash and peel the carrots thoroughly, ensuring you remove all dirt.
- Chop the peeled carrots into small pieces for easier grating.
- Grate the carrots using a box grater or food processor until fine, about 2-3 minutes.
- Transfer the grated carrots to a large mixing bowl and set aside.
- In a separate bowl, combine the oats, ground almonds, cinnamon, and salt. Mix well!
Mixing
- Add the grated carrots to the dry mixture and stir until evenly combined.
- In a small bowl, mix the honey with the vanilla extract, then pour it into the carrot-oat mix.
- If using, toss in the raisins or dried cranberries now.
- Use your hands (or a spoon) to mix everything until it forms a sticky dough. If it feels too dry, add a tablespoon of water.
Forming the Balls
- Take a small handful (about a tablespoon's worth) and roll it into a ball (3-4 cm in diameter).
- Repeat until the mixture’s gone, aiming for around 20-25 balls.
- If desired, roll the balls in coconut flakes for an extra touch!
- Place the finished carrot balls on a parchment-lined tray and cover them with plastic wrap or store them in an airtight container.
- Chill in the fridge for at least 30 minutes. Then they’re ready to serve! Enjoy as a snack or a sweet treat.
Notes
These carrot balls keep well in the fridge for up to a week. You can freeze them by placing them in a single layer on a baking tray until frozen, then transferring to an airtight container. Perfect for a quick snack anytime!
