Ingredients
  

Main Ingredients
  • 500 g fresh carrots, peeled Use fresh carrots for best flavor.
  • 200 g oats (fine or coarse)
  • 100 g ground almonds Changes texture and flavor.
  • 50 g honey or agave syrup Adjust sweetness to preference.
  • 1 tsp cinnamon For a warm flavor.
  • 1 tsp vanilla extract Enhances sweetness.
  • a pinch salt
Optional Ingredients
  • 50 g raisins or dried cranberries Add for sweetness.
  • coconut flakes for rolling Optional for decoration.

Method
 

Preparation
  1. Wash and peel the carrots thoroughly, ensuring you remove all dirt.
  2. Chop the peeled carrots into small pieces for easier grating.
  3. Grate the carrots using a box grater or food processor until fine, about 2-3 minutes.
  4. Transfer the grated carrots to a large mixing bowl and set aside.
  5. In a separate bowl, combine the oats, ground almonds, cinnamon, and salt. Mix well!
Mixing
  1. Add the grated carrots to the dry mixture and stir until evenly combined.
  2. In a small bowl, mix the honey with the vanilla extract, then pour it into the carrot-oat mix.
  3. If using, toss in the raisins or dried cranberries now.
  4. Use your hands (or a spoon) to mix everything until it forms a sticky dough. If it feels too dry, add a tablespoon of water.
Forming the Balls
  1. Take a small handful (about a tablespoon's worth) and roll it into a ball (3-4 cm in diameter).
  2. Repeat until the mixture’s gone, aiming for around 20-25 balls.
  3. If desired, roll the balls in coconut flakes for an extra touch!
  4. Place the finished carrot balls on a parchment-lined tray and cover them with plastic wrap or store them in an airtight container.
  5. Chill in the fridge for at least 30 minutes. Then they’re ready to serve! Enjoy as a snack or a sweet treat.

Notes

These carrot balls keep well in the fridge for up to a week. You can freeze them by placing them in a single layer on a baking tray until frozen, then transferring to an airtight container. Perfect for a quick snack anytime!
