Wet Ingredients
  • 1/2 cup applesauce Acts as a sweetener and binds the mix
  • 1 teaspoon vanilla extract Adds flavor
Additions

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the oats, almond flour, ground cinnamon, and salt.
  3. Add the applesauce and vanilla extract; mix until well combined.
  4. Fold in the blueberries gently to keep them intact.
  5. Scoop the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
  1. Bake for 12-15 minutes or until lightly golden.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies pair well with tea or coffee and can be enhanced with a drizzle of honey or maple syrup. Store leftovers in an airtight container at room temperature for up to 5 days or refrigerate for a longer shelf life.
