Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, baking powder, and salt.
- In another bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
- Mix in egg yolks, vanilla paste, and butter extract.
- Gradually add butterscotch beer and melted butterscotch chips.
- Fold in the additional butterscotch chips.
- Chill the dough for about 30 minutes.
Baking
- Scoop dough onto a baking sheet.
- Bake for 10-12 minutes, or until golden.
For the Butterscotch Buttercream
- Beat softened butter until creamy.
- Gradually add in powdered sugar, heavy cream, melted butterscotch chips, salt, and extracts.
- Beat on medium until fluffy.
Decorating
- Once cookies have cooled, pipe or spread the butterscotch buttercream on top.
- Drizzle with butterscotch caramel for the finishing touch.
Notes
These cookies pair well with butterscotch beer or hot cocoa. Best served warm right out of the oven.
