Preparation
- Bring a large pot of salted water to a boil.
- Add the green beans and blanch for 2–3 minutes until they’re bright green and crisp-tender.
- Drain and immediately toss them into an ice bath to stop the cooking. Drain again and pat dry.
Mixing
- In a large bowl, whisk together the balsamic vinegar and olive oil.
- Toss the red onion, green beans, basil, and Parmesan until everything is beautifully coated.
- Season with salt and a fresh crack of black pepper to taste.
Serving
- Serve it chilled or at room temperature.
Notes
Blanching the green beans quickly is key to maintaining their crunch. Swap balsamic for red wine vinegar for a different flavor.
