Ingredients
  

For the salad
  • 1.5 lbs fresh green beans, trimmed and cut into 2–3 inch pieces Fresh green beans are recommended for the best texture.
  • 0.5 cup finely chopped red onion or shallots
  • 2 tbsp balsamic vinegar
  • 4 tbsp extra virgin olive oil
  • 0.75 cup chopped fresh basil leaves Using fresh basil is essential for flavor.
  • 0.75 cup freshly grated Parmesan cheese (~1½ oz)
  • Kosher salt (for boiling water + seasoning) Use as needed.
  • Freshly ground black pepper, to taste

Method
 

Preparation
  1. Bring a large pot of salted water to a boil.
  2. Add the green beans and blanch for 2–3 minutes until they’re bright green and crisp-tender.
  3. Drain and immediately toss them into an ice bath to stop the cooking. Drain again and pat dry.
Mixing
  1. In a large bowl, whisk together the balsamic vinegar and olive oil.
  2. Toss the red onion, green beans, basil, and Parmesan until everything is beautifully coated.
  3. Season with salt and a fresh crack of black pepper to taste.
Serving
  1. Serve it chilled or at room temperature.

Notes

Blanching the green beans quickly is key to maintaining their crunch. Swap balsamic for red wine vinegar for a different flavor.
