Preparation
  1. Boil the potatoes: Toss them into a pot of salted water and let them cook until tender, about 10-15 minutes.
  2. Add the green beans: Once the potatoes are ready, throw in the green beans for another 3-5 minutes until they turn bright green and tender-crisp.
  3. Cool them down: Drain your veggies and rinse them under cold water to stop the cooking.
  4. Whisk the dressing: In a small bowl, combine the olive oil, Dijon mustard, apple cider vinegar, salt, and pepper. Whisk it well!
  5. Combine it all: In a big bowl, mix the potatoes and green beans, then pour the dressing over the top.
  6. Toss it: Gently toss everything together to ensure each piece is coated nicely.
  7. Garnish and serve: Add fresh parsley on top before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Give it a gentle toss before serving. For a sweeter twist, consider using honey mustard instead of Dijon.
