  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened Make sure butter is at room temperature.
  • 3/4 cup powdered sugar
  • 1/2 teaspoon salt Use kosher or sea salt for best flavor.
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/4 teaspoon almond extract Optional, for added flavor.
  • to taste Granulated sugar for sprinkling

Method
 

Preparation
  1. In a large bowl, cream the softened butter with powdered sugar until light and fluffy, about 3-4 minutes.
  2. Beat in the egg yolk, vanilla extract, and almond extract if you're feeling fancy.
  3. Gradually mix in the flour and salt until just combined to form a soft dough.
  4. Chill the dough for about 1 hour until firm.
  5. Shape the dough into balls or roll into a log, slice into 1/4-inch rounds.
  6. Place these on a parchment-lined baking sheet, flatten slightly, and sprinkle with granulated sugar.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Bake for 12-15 minutes, until the edges are lightly golden.
  3. Remove from the oven and cool on a wire rack before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
