  • 2 cups sweet potatoes, diced Microwave to soften for quicker baking.
  • 6 pieces eggs
  • 1 cup milk Can substitute with almond milk for a dairy-free option.
  • 1/2 cup shredded cheese Customize with feta or goat cheese for a twist.
  • 1/2 piece onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil For greasing the baking dish.

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking dish with olive oil.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika.
  3. Add the diced sweet potatoes, chopped onion, and shredded cheese to the egg mixture. Mix it all up!
Baking
  1. Pour the mixture into the greased baking dish.
  2. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is lightly golden.
  3. Let cool slightly before serving.

Notes

Serve warm, optionally garnished with chopped herbs or extra cheese. Pairs well with a fresh salad or crispy bacon.
