  • 1/2 cup creamy peanut butter
  • 1/3 cup honey Can be substituted with maple syrup for a vegan option.
  • 1/4 cup chocolate chips Optional, can add for a chocolatey twist.
  • 1 pinch salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a mixing bowl, combine oats, peanut butter, honey, and a pinch of salt. Stir until everything is well incorporated.
  2. Add the vanilla extract to the mixture and stir again until smooth and creamy.
  3. If desired, fold in the chocolate chips to the mixture.
  4. Using a muffin tin or silicone molds, press the mixture down firmly.
  5. Refrigerate the cups for at least one hour until they firm up.
  6. Once set, pop them out of the molds and savor each bite.

Notes

Store these oat cups in an airtight container in the fridge for up to one week. They can also be frozen for up to three months. Let thaw before eating.
