  • 1 lb ground beef or turkey
  • 1 cup marinara sauce low-carb if you prefer
  • 1 cup mixed bell peppers, diced
  • 1 cup sliced mushrooms
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef or turkey over medium heat. Drain excess fat.
  3. Add bell peppers and mushrooms, and sauté until they soften (about 5 minutes).
  4. Stir in the marinara sauce, Italian seasoning, salt, and pepper. Mix well.
  5. Transfer your mixture into a casserole dish and top it with mozzarella cheese.
  6. Bake for about 20-25 minutes, or until the cheese is bubbly and golden.

Notes

Leftovers keep well in the fridge for about 3-4 days. Freeze individual portions for up to 3 months. Reheat in the microwave or oven until warm.
