Easy Lasagna

Ingredients
  

Meat and Sauce
  • 1 lb ground beef
  • 1/2 lb sweet Italian sausage
  • 1 tsp minced garlic
  • 48 oz prepared spaghetti sauce
  • 1/4 cup water If using thick sauce
Cheese Mixture
  • 15 oz ricotta cheese (or cottage cheese)
  • 2 large eggs
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tsp dried parsley (or 4 tbsp chopped fresh parsley)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Lasagna Noodles and Topping
  • 12 pieces uncooked lasagna noodles
  • 1 cup shredded mozzarella cheese (for topping)
  • 1/4 cup grated parmesan cheese (for topping)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef and sweet Italian sausage over medium heat. Add minced garlic and cook for about 1 minute until fragrant.
  3. Stir in the spaghetti sauce, and let it simmer for a few minutes. If it’s too thick, add 1/4 cup of water.
  4. In a bowl, mix together the ricotta cheese, eggs, parsley, salt, and pepper until combined.
Assembly
  1. In a 9x13 inch baking dish, spread a layer of the meat sauce. Then, place 3 lasagna noodles on top, followed by 1/3 of the ricotta mixture and 1/3 of the mozzarella cheese.
  2. Repeat layering until all ingredients are used, finishing with meat sauce on top. Sprinkle with remaining cheeses.
Baking
  1. Cover with foil and bake for 25 minutes. Uncover and bake for an additional 25 minutes until bubbly and golden.
  2. Let it cool for a few minutes before slicing.

Notes

Serve with a fresh side salad for a perfect contrast to the cheesy layers. Leftovers can be stored in the fridge for about 3-5 days or frozen for up to 3 months.
