Preparation
- Preheat your oven to 400°F (about 200°C).
- Pat the chicken breasts dry and rub them with olive oil, garlic powder, paprika, salt, and pepper.
Cooking
- Arrange the chicken on one side of a large baking sheet and add broccoli and cauliflower on the other side. Drizzle them with olive oil and seasoning.
- Bake for 25-30 minutes, or until the chicken is fully cooked and veggies are tender.
- Slice the chicken and serve warm, or let it cool for meal prepping.
Notes
Meal prep these meals for the week and store them in airtight containers in the fridge for up to 4 days. Freeze portions for up to 3 months and reheat in the microwave or oven until warm. To save time, prep your veggies while the oven preheats. Swap chicken for tofu for a plant-based version.
