Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  3. Stir in the mixed vegetables, salt, and pepper.
  4. Grease a baking dish with olive oil or cooking spray.
  5. Pour the egg mixture into the prepared baking dish.
  6. If using, sprinkle shredded cheese on top.
  7. Bake for 25-30 minutes or until the egg is set and lightly golden.
  8. Let it cool for a few minutes before slicing and serving.

Notes

For a fluffier texture, mix in a splash of milk or cream. You can also add fresh herbs like chives or parsley for enhanced flavor. If you wish to swap out cottage cheese, ricotta or Greek yogurt can be used, though the flavor may vary slightly.
