  • 1/2 lb mini sweet peppers Sliced in half and seeded
  • 1/4 cup fat-free feta cheese For creamy filling
  • 2 pieces light Laughing Cow cheddar cheese wedges
  • to taste everything bagel seasoning For flavor
  • 1/2 tsp chili crunch For an extra kick
  • 1 tbsp oil drained from peppers Optional for stuffing

Method
 

Preparation
  1. Slice the mini peppers in half lengthwise and remove any seeds. Lay them out on a serving platter or sheet pan.
Cheese Mixture
  1. In a small bowl, mix the fat-free feta cheese with the light Laughing Cow cheddar cheese wedges.
  2. Pop the bowl of cheese mixture into the microwave for about 30 seconds to soften the cheese. Add the everything bagel seasoning and chili crunch, then mix until everything is well combined.
Stuffing and Serving
  1. Using a spoon, fill the pepper halves with the cheese mixture.
  2. Serve immediately and enjoy the burst of flavors in every bite. Garnish with herbs or green onions if desired.
  3. For warm, gooey peppers, bake them for 5 minutes.

Notes

These peppers can be served warm or cold and pair well with various dips or veggie platters. Store leftovers in an airtight container in the fridge for up to 3 days.
