  • 2 cups rolled oats
  • 1 cup milk (or dairy alternative)
  • 2 ripe bananas mashed can substitute with unsweetened applesauce
  • 1/2 cup Greek yogurt can substitute with a dairy-free alternative for a vegan option
  • 1/4 cup honey (or maple syrup) maple syrup can be used for a vegan option
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon don’t skip for aroma
  • 1/2 cup mixed berries optional
  • 1/4 cup nuts or seeds optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, milk, mashed bananas, Greek yogurt, honey, baking powder, vanilla extract, and cinnamon until well combined.
  3. If desired, fold in the mixed berries and nuts or seeds.
  4. Pour the mixture into a greased baking dish and spread evenly.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the oats are set.
  2. Allow to cool slightly before slicing into squares.
Storage
  1. Store in the refrigerator for up to 5 days or freeze for up to a month.

Notes

Serve warm with a drizzle of honey or maple syrup on top, a sprinkle of crunchy nuts, or a handful of fresh berries. These oats can be customized with various fruits and spices for different flavors.
