Ingredients
  

Main Ingredients
  • 1 pound ground beef Can substitute with ground turkey or plant-based crumbles
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
Toppings
  • 2 cups shredded cheese Layer some during cooking and sprinkle more on top before serving
  • Tortilla chips Optional, but highly recommended as a topping

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. In a Crockpot, combine the cooked beef, black beans, corn, diced tomatoes, and taco seasoning. Mix well.
Cooking
  1. Cook on low for 4-6 hours.
  2. During the last 30 minutes, stir in 1 cup of cheese.
Serving
  1. Serve hot, topped with the remaining cheese and crushed tortilla chips if desired.

Notes

This casserole keeps well for about 3-4 days in the fridge. For longer storage, freeze it in an airtight container for up to 3 months. To reheat, simply pop it in the microwave until bubbling hot.
