Preparation
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- In a Crockpot, combine the cooked beef, black beans, corn, diced tomatoes, and taco seasoning. Mix well.
Cooking
- Cook on low for 4-6 hours.
- During the last 30 minutes, stir in 1 cup of cheese.
Serving
- Serve hot, topped with the remaining cheese and crushed tortilla chips if desired.
Notes
This casserole keeps well for about 3-4 days in the fridge. For longer storage, freeze it in an airtight container for up to 3 months. To reheat, simply pop it in the microwave until bubbling hot.
