  • 4 pieces boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 packet ranch seasoning mix
  • 8 slices cooked and crumbled bacon
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • optional Green onions for garnish

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add cream cheese and ranch seasoning on top of the chicken.
  3. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is cooked through.
  4. Shred the chicken using two forks and stir it all together with the cream cheese mixture.
  5. Stir in crumbled bacon and shredded cheddar cheese until it melts and combines nicely.
  6. Season with salt and pepper to taste.
  7. Serve over rice, in sandwiches, or enjoy on its own! Garnish with green onions if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days, or in the freezer for about 3 months. When reheating, use the microwave or stovetop.
