  • 4 pieces boneless, skinless chicken breasts
  • 1 cup sundried tomatoes, chopped
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated parmesan cheese for serving
  • Fresh basil for garnish Essential for added freshness.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crock pot.
  2. In a bowl, mix together the chopped sundried tomatoes, heavy cream, chicken broth, garlic powder, Italian seasoning, salt, and pepper.
  3. Pour the mixture over the chicken breasts.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  2. Once cooked, shred the chicken in the sauce or serve whole.
Serving
  1. Serve over pasta, rice, or mashed potatoes, and top with grated parmesan cheese and fresh basil.

Notes

This dish can be stored in the fridge for 3-4 days in an airtight container. Freeze for up to 3 months for later use. Reheat in the microwave or on the stove until warmed through. Don't skip the fresh basil for added flavor.
