Preparation
- Place the chicken breasts at the bottom of the crock pot.
- In a bowl, mix together the chopped sundried tomatoes, heavy cream, chicken broth, garlic powder, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken breasts.
Cooking
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Once cooked, shred the chicken in the sauce or serve whole.
Serving
- Serve over pasta, rice, or mashed potatoes, and top with grated parmesan cheese and fresh basil.
Notes
This dish can be stored in the fridge for 3-4 days in an airtight container. Freeze for up to 3 months for later use. Reheat in the microwave or on the stove until warmed through. Don't skip the fresh basil for added flavor.
