Cooking Steps
  1. Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
  2. Sprinkle the crumbled feta cheese evenly in the skillet, covering the bottom.
  3. Allow the feta to cook for about 1-2 minutes until it melts slightly and the edges turn crispy.
  4. Crack the eggs carefully over the feta, making sure they aren’t too close together.
  5. Season the eggs with salt and black pepper to taste.
  6. Cook for about 3-4 minutes or until the whites are set and the yolks still runny.
  7. Optional: Sprinkle chopped parsley and red pepper flakes over the eggs for added flair.
  8. Gently slide the eggs and crispy feta onto a plate. Serve immediately and enjoy!
