  • 1 cup heavy cream For a creamier texture, blend a portion of the soup before adding.
  • 1 cup shredded cheddar cheese Different cheeses like mozzarella or gouda can be used for variation.

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat; drain excess fat.
Cooking
  1. Add the ground beef, diced potatoes, chopped onion, and beef broth to the crockpot.
  2. Cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  3. Stir in the heavy cream and shredded cheese about 30 minutes before serving.
  4. Season with salt and pepper to taste.

Notes

For best flavor, consider adding garlic or herbs while cooking. Great served with crusty bread or a salad. Leftovers can be stored in the fridge for 3-4 days or freeze for up to 3 months.
