  • 1 lb fresh green beans, trimmed (or 2 cans of green beans, drained)
  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup crispy fried onions (for topping)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Cook the chopped bacon in a skillet over medium heat until crispy. Don’t forget to save a tablespoon of that glorious grease!
  3. Remove the bacon, and in the same skillet, toss in diced onions and cook until they’re soft. Stir in garlic for about a minute.
  4. If using fresh, quickly steam or blanch the green beans until tender but still crisp. Set aside.
  5. In a large bowl, blend cream cheese, sour cream, milk, garlic powder, onion powder, salt, and pepper until smooth. Fold in the onions, garlic, and half of the crispy bacon.
  6. Add green beans and mix until fully coated in the creamy mixture.
  7. Transfer the green bean mixture into the baking dish, sprinkle with cheddar and Parmesan cheese, and bake for 20-25 minutes.
  8. After baking, sprinkle the crispy fried onions and remaining bacon bits on top, then bake for another 5 minutes until golden and crispy.
  9. Let it sit for a minute before serving.

Notes

For extra texture, consider adding diced mushrooms or bell peppers. For a healthier version, use turkey bacon or reduced-fat cream cheese. You can also prepare the dish a day in advance and bake just before serving.
