  • 6 slices slices of bacon Cooked until crispy
  • 1 cup shredded cheese (cheddar or your choice) Use your favorite cheese
  • 6 large eggs
  • 2 cups frozen hash browns No need to thaw
  • 1 cup milk
  • to taste Salt and pepper
Optional Garnish
  • chopped green onions or bell peppers For color and crunch

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the bacon until crispy. Remove from the skillet, let cool, and chop into pieces.
  3. In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
  4. Add the crispy bacon, hash browns, and cheese to the egg mixture. Mix well.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 30-35 minutes or until the eggs are set and the top is golden.
  7. Garnish with optional green onions or bell peppers before serving.

Notes

For added nutrients, consider adding chopped bell peppers or spinach. You can prep the casserole the night before and bake it in the morning for a stress-free breakfast. This casserole keeps well in the fridge for up to 3 days or can be frozen for up to 3 months.
