  • 1 cup cottage cheese
  • 2 cups fresh spinach (chopped)
  • 4 large eggs
  • 1 cup shredded cheddar cheese (divided) Half for mixing, half for topping
  • 1 small onion (finely chopped)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • as needed Nonstick cooking spray For greasing the baking dish

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté the chopped onion in a pan over medium heat until softened, about 5 minutes.
  3. In a large bowl, combine cottage cheese, sautéed onion, spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Mix well.
  4. Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.
  5. Bake for 30-35 minutes until set and golden brown on top.
  6. Let cool slightly before slicing.

Notes

For best results, let the quiche cool slightly before slicing to maintain its shape. You can swap cheddar for feta or goat cheese for variation. Mix in cooked bacon or chicken for a heartier dish. Use frozen spinach to avoid wilting.
