Method
Preparation
- Blend the rolled oats into a fine powder.
- In a large bowl, mix powdered oats, almond flour, ground flaxseed, protein powder, cinnamon, and nutmeg until combined.
- Add almond butter and maple syrup to the dry ingredients. Stir until it looks crumbly.
- Gradually add almond milk, one tablespoon at a time, mixing until a sticky but firm dough forms. Adjust with more almond flour or milk as needed.
Forming Bites
- Roll the dough into 1-inch balls.
- Mix powdered sugar and cinnamon for coating, then roll each bite in the mixture.
Chilling and Glazing
- Place the bites on parchment paper and refrigerate for at least 30 minutes.
- Whisk together cream cheese, powdered sugar, and almond milk to achieve desired glaze consistency.
- Drizzle the glaze over the chilled bites and serve immediately or store in the fridge.
Notes
These bites can be stored in the fridge for about 5 days or frozen for longer storage. If you like it sweeter, add more maple syrup or powdered sugar. Keep hands damp while rolling to prevent stickiness.
