Ingredients
  

Dry Ingredients
  • 50 g 1/2 cup Rolled Oats, blended into powder
  • 96 g 1 cup Almond Flour
  • 14 g 2 tbsp Ground Flaxseed
  • 30 g 1/4 cup Vanilla Protein Powder
  • 5 g 1 tsp Cinnamon
  • 1 g 1/4 tsp Nutmeg
Wet Ingredients
  • 60 ml 1/4 cup Almond Butter Can substitute with peanut or cashew butter
  • 30 ml 2 tbsp Maple Syrup Adjust for sweetness if preferred
  • 60 ml 1/4 cup Unsweetened Almond Milk Add more if needed to adjust dough consistency
  • 30 g 2 tbsp Cream Cheese or Dairy-free Alternative
Coating
  • 16 g 2 tbsp Powdered Sugar For coating
  • 5 g 1 tbsp Cinnamon
  • 24 g 3 tbsp Powdered Sugar For glaze
  • 5-10 ml 1-2 tsp Unsweetened Almond Milk Add incrementally for glaze consistency

Method
 

Preparation
  1. Blend the rolled oats into a fine powder.
  2. In a large bowl, mix powdered oats, almond flour, ground flaxseed, protein powder, cinnamon, and nutmeg until combined.
  3. Add almond butter and maple syrup to the dry ingredients. Stir until it looks crumbly.
  4. Gradually add almond milk, one tablespoon at a time, mixing until a sticky but firm dough forms. Adjust with more almond flour or milk as needed.
Forming Bites
  1. Roll the dough into 1-inch balls.
  2. Mix powdered sugar and cinnamon for coating, then roll each bite in the mixture.
Chilling and Glazing
  1. Place the bites on parchment paper and refrigerate for at least 30 minutes.
  2. Whisk together cream cheese, powdered sugar, and almond milk to achieve desired glaze consistency.
  3. Drizzle the glaze over the chilled bites and serve immediately or store in the fridge.

Notes

These bites can be stored in the fridge for about 5 days or frozen for longer storage. If you like it sweeter, add more maple syrup or powdered sugar. Keep hands damp while rolling to prevent stickiness.
